TEST – Sweet & Spicy Crispy Brussels Sprouts

Soft vanilla cookies hugging a pink strawberry cream cheese filling. They’re gluten-free, made with no added sugar, and the pink comes from real strawberries. Perfect for Valentine’s Day, or any day that needs something sweet.

Nutritionist’s note

These get their sweetness from monk fruit and a no-added-sugar pancake mix, and their pink color from real strawberries. Almond butter and eggs make the cookies soft and satisfying.

They’re still a treat, and that’s the point. Enjoy one with zero guilt.

Cookie sandwiches are my love language, guys. These ones look fancy, but they come together with a handful of ingredients, and the filling is basically strawberries, cream cheese and vanilla whipped together. Make them for someone you love (including yourself).

Watch it made

From dough to pink filling in under a minute.

Why this works

  • A shortcut base. Dilettoso’s Vava Vanilla mix is gluten-free with no added sugar, so the dough is ready in minutes.
  • Almond butter for softness. It keeps the cookies tender and adds healthy fats.
  • Real fruit for color. Warm frozen strawberries turn the filling pink, no food coloring needed.

Ingredient notes

  • Dilettoso Vava Vanilla mix. Gluten-free with no added sugar. It’s the base of the cookie dough.
  • Monk fruit sweetener. Granulated for the cookies, powdered for a smooth filling.
  • Cream cheese. Let it come to room temperature so the filling whips up smooth.
  • Frozen strawberries. A quick warm-up in the microwave releases their juice and color.

How to make it

Five steps with photos, so you can see exactly what each stage should look like. Amounts are in the recipe card.

Start the dough

1. Start the dough

Preheat the oven to 350°F (175°C) and line a baking sheet. Mix the Vava Vanilla mix, baking powder, sea salt and granulated monk fruit, then add the almond butter and crack in the eggs.

2. Mix it together

Stir everything together until a soft, cohesive dough forms.

Shape and bake

3. Shape and bake

Scoop the dough into 10 large cookies. Bake for about 10 minutes, until the edges are lightly golden, then let them cool completely.

4. Make the pink filling

Microwave the frozen strawberries for 1 minute. Beat them with the cream cheese, powdered monk fruit and vanilla until smooth.

Fill and decorate

5. Fill and decorate

Spread or pipe the filling between two cookies and finish with sprinkles.

Tips from my kitchen

  • Let the cookies cool completely before filling, or the cream cheese will melt.
  • Use room-temperature cream cheese for the smoothest filling.
  • A piping bag makes it easy, but a spoon works just fine.

Swaps and variations

Any no-added-sugar vanilla pancake mix can work in place of the Vava Vanilla mix, though the texture may change a little.

Storage

Keep the filled cookie sandwiches in an airtight container in the fridge for up to 3 days.

Questions I get asked

Yes, as written. The Vava Vanilla mix is gluten-free; just check your baking powder and sprinkles if you’re baking for someone with celiac.

The cookies and filling are sweetened with monk fruit and the mix has no added sugar. Most sprinkles do contain sugar, so skip them if you want zero added sugar.
